A Canadian bacon breakfast casserole is a baked dish that combines eggs, cheese, bread (or hashbrowns), and slices of Canadian bacon. It’s a versatile and filling breakfast option that can be made ahead and baked fresh in the morning.

  • 1 cup milk (or half-and-half for a creamier texture)

  • 1 ½ cups shredded cheddar cheese

  • 1 ½ cups diced Canadian bacon

  • 4 cups cubed bread (French or sourdough) or 3 cups thawed hashbrowns

  • 1 small onion, finely chopped (optional)

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons butter (for greasing and flavor)

  • 2 tablespoons fresh parsley or chives, chopped (optional garnish)

Instructions

Step 1: Preheat the oven

Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.

Step 2: Prepare base

Spread cubed bread or hashbrowns evenly in the baking dish to form the base.

Step 3: Add bacon and cheese

Layer diced Canadian bacon evenly over the bread. Sprinkle half of the shredded cheese on top.

Step 4: Make egg mixture

In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper until smooth.

Step 5: Assemble and pour

Pour the egg mixture evenly over the bread and bacon layers, pressing gently so the bread absorbs the custard. Top with the remaining cheese.

Step 6: Bake casserole

Bake uncovered for 35–40 minutes or until the eggs are set and the top is golden brown.

Step 7: Rest and serve

Allow the casserole to cool for 5–10 minutes before slicing. Garnish with chopped parsley or chives if desired.
