A Canadian bacon breakfast casserole is a baked dish that combines eggs, cheese, bread (or hashbrowns), and slices of Canadian bacon. It’s a versatile and filling breakfast option that can be made ahead and baked fresh in the morning.
8 large eggs
1 cup milk (or half-and-half for a creamier texture)
1 ½ cups shredded cheddar cheese
1 ½ cups diced Canadian bacon
4 cups cubed bread (French or sourdough) or 3 cups thawed hashbrowns
1 small onion, finely chopped (optional)
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons butter (for greasing and flavor)
2 tablespoons fresh parsley or chives, chopped (optional garnish)
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
Spread cubed bread or hashbrowns evenly in the baking dish to form the base.
Layer diced Canadian bacon evenly over the bread. Sprinkle half of the shredded cheese on top.
In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper until smooth.
Pour the egg mixture evenly over the bread and bacon layers, pressing gently so the bread absorbs the custard. Top with the remaining cheese.
Bake uncovered for 35–40 minutes or until the eggs are set and the top is golden brown.
Allow the casserole to cool for 5–10 minutes before slicing. Garnish with chopped parsley or chives if desired.
