Cheesy breakfast tacos are a quick and savory breakfast made with scrambled eggs, cheese, and other fillings such as sausage, bacon, or vegetables, wrapped in a soft tortilla.   • 4 small flour or corn tortillas

  • Optional fillings: cooked sausage, bacon, diced bell peppers, onions, spinach, or mushrooms

  • Optional toppings: salsa, avocado slices, sour cream, cilantro, or hot sauce

Instructions

Step 1: Prepare the eggs

Crack eggs into a bowl, add milk, salt, and pepper, and whisk until well combined.

Step 2: Cook the eggs

In a non-stick skillet, melt butter over medium heat. Pour in the egg mixture and cook slowly, stirring gently, until soft and creamy scrambled eggs form.

Step 3: Add cheese

Sprinkle shredded cheese over the eggs and stir until melted and fully combined. Remove from heat.

Step 4: Warm the tortillas

Heat tortillas in a dry skillet for 30 seconds on each side or wrap them in foil and warm in the oven at 350°F (175°C) for 5 minutes.

Step 5: Assemble the tacos

Spoon the cheesy scrambled eggs onto each tortilla. Add your favorite fillings and top with salsa, avocado, or sour cream.

Step 6: Serve and enjoy
