Instructions

  1. Mix dry ingredients – In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. Whisk wet ingredients – In another bowl, mix buttermilk, egg yolks, melted butter, and vanilla extract.
  3. Beat egg whites separately – In a clean bowl, beat the egg whites until soft peaks form (this makes the pancakes extra fluffy).
  4. Combine the mixtures – Gently fold the wet ingredients into the dry ingredients until just combined. Then, carefully fold in the beaten egg whites without overmixing.
  5. Heat the pan – Warm a non-stick skillet or griddle over medium heat and grease with butter or oil.
