Gordon Ramsay’s Apple Pie features a golden, flaky pastry filled with tender, spiced apples that are slightly caramelized for extra depth. The pie is baked until golden brown and crisp, creating a perfect balance of sweet, tart, and buttery flavors.

For the Pie Crust:

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 6 tbsp ice water

For the Apple Filling:

  • 6 Granny Smith or Honeycrisp apples, peeled and sliced
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 tbsp cornstarch
  • 1 tbsp butter, melted
  • 1 tsp vanilla extract

For Assembly:

  • 1 egg yolk (for egg wash, mixed with 1 tbsp water)
  • 1 tbsp granulated sugar (for sprinkling on top)

Instructions

Prepare the Pie Crust:

  1. Combine flour, sugar, and salt – Mix in a bowl.
  2. Cut in the butter – Use a pastry cutter or hands until the mixture looks like coarse crumbs.
  3. Add ice water – One tablespoon at a time, mixing until the dough holds together.
  4. Chill the dough – Wrap in plastic wrap and refrigerate for 30 minutes.

Prepare the Apple Filling:

  1. Toss apples with sugar and spices – In a bowl, mix apples, brown sugar, granulated sugar, cinnamon, nutmeg, salt, and lemon juice.
  2. Cook slightly – In a pan, melt butter and cook the apples for 5 minutes until slightly softened.
  3. Add cornstarch and vanilla – Stir well to thicken the mixture, then let cool.

Assemble the Pie:

  1. Roll out the dough – Divide into two portions, rolling one into a 12-inch circle for the bottom crust.
  2. Fill with apple mixture – Pour the cooled apple filling into the crust.
  3. Add top crust – Roll out the second dough and cover the filling, sealing the edges.
  4. Brush with egg wash – Lightly brush the top with egg yolk and water mixture and sprinkle with sugar.
  5. Cut small slits – Allows steam to escape during baking.

Bake the Pie:

  1. Preheat oven to 375°F (190°C) – Place the pie on a baking sheet.
  2. Bake for 45-50 minutes – Until the crust is golden and the filling is bubbling.
  3. Cool before slicing – Let the pie rest for at least 30 minutes before serving.
