  • For the sausages:

    • 6 high-quality sausages
    • 1 tbsp olive oil
    • 1 tbsp unsalted butter
  • For the mashed potatoes:

    • 2 lbs (900g) Yukon Gold or Russet potatoes, peeled and diced
    • ½ cup heavy cream
    • 4 tbsp unsalted butter
    • ½ tsp salt
    • ¼ tsp black pepper
    • 1 tbsp Dijon mustard (optional)
  • For the onion gravy:

    • 1 large onion, thinly sliced
    • 1 tbsp unsalted butter
    • 1 tbsp olive oil
    • 1 tbsp flour
    • 1 cup beef broth
    • ½ cup red wine (optional)
    • 1 tsp Worcestershire sauce
    • ½ tsp fresh thyme leaves (optional)

Instructions

  1. Cook the sausages – Heat oil and butter in a pan over medium heat. Add sausages and cook for 12-15 minutes, turning occasionally until golden brown and cooked through. Set aside.
  2. Make the mashed potatoes – Boil potatoes in salted water until fork-tender. Drain, then mash with butter, cream, salt, and black pepper. Stir in Dijon mustard for extra flavor.
  3. Prepare the onion gravy – In the same pan, melt butter and oil, then add sliced onions. Cook until soft and caramelized.
  4. Thicken the gravy – Stir in flour, cook for 1 minute, then slowly add beef broth and red wine. Simmer until thickened, then stir in Worcestershire sauce and thyme.
  5. Assemble and serve – Plate the mashed potatoes, top with sausages, and drizzle with onion gravy. Enjoy hot!
