The brisket is first seared for flavor, then simmered low and slow in a mixture of stock, wine, and aromatics. This method ensures a juicy, fork-tender result that pairs beautifully with mashed potatoes, roasted vegetables, or fresh bread.

  • 34 lbs beef brisket
  • 2 tablespoons olive oil
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef stock
  • 1 cup red wine (or use extra stock)
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven: Set the oven to 300°F (150°C).
  2. Season and sear the brisket: Rub salt and pepper on all sides of the brisket. Heat olive oil in a large ovenproof pot and sear the meat until browned on all sides. Remove and set aside.
  3. Sauté the vegetables: In the same pot, add onions, garlic, carrots, and celery. Sauté until softened and aromatic.
  4. Add tomato paste and deglaze: Stir in tomato paste, then pour in red wine, scraping up any browned bits from the bottom. Let the wine reduce slightly.
  5. Return the brisket and add liquids: Place the brisket back in the pot, add beef stock, Worcestershire sauce, thyme, rosemary, and bay leaves.
  6. Slow cook in the oven: Cover and transfer to the oven. Braise for 3-4 hours, basting occasionally, until the brisket is fork-tender.
  7. Rest and slice: Remove from the pot, let it rest for 15 minutes, then slice against the grain. Serve with the reduced sauce.
