Gordon Ramsay’s Beef Curry is a slow-cooked, mildly spiced dish with fall-apart tender beef simmered in a fragrant, creamy sauce. It blends Indian and British flavors, using traditional curry spices and a touch of coconut milk for a silky finish.

For the Beef Curry

  • 2 tablespoons vegetable oil
  • 1 lb (450g) beef chuck or stewing beef, cut into cubes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder (adjust to spice preference)
  • 1 teaspoon paprika
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • ½ cup coconut milk
  • 1 cup beef stock
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional, balances acidity)

For Garnish & Serving

  • Fresh cilantro, chopped
  • Juice of ½ lemon
  • Steamed basmati rice or naan

Instructions

Step 1: Sear the Beef

  1. Heat vegetable oil in a large pan over medium-high heat.
  2. Season beef with salt and black pepper, then sear for 4-5 minutes until browned on all sides. Remove and set aside.

Step 2: Sauté the Aromatics

  1. In the same pan, add onions and sauté for 5 minutes until golden.
  2. Add garlic and ginger, cooking for 1 minute until fragrant.

Step 3: Cook the Spices

  1. Stir in cumin, coriander, garam masala, turmeric, paprika, and chili powder, cooking for 30 seconds to toast the spices.
  2. Mix in tomato paste and cook for 1 minute to deepen the flavor.

Step 4: Simmer the Curry

  1. Add diced tomatoes and beef stock, then return the beef to the pan.
  2. Bring to a simmer, cover, and cook for 60 minutes, stirring occasionally.

Step 5: Finish with Coconut Milk

  1. Pour in coconut milk, stir well, and simmer uncovered for another 10 minutes until thickened.
  2. Taste and adjust seasoning with salt, pepper, or sugar if needed.

Step 6: Serve and Garnish

  1. Squeeze fresh lemon juice over the curry and garnish with chopped cilantro.
  2. Serve hot with basmati rice or naan.
