For the Beef Stew:

  • 2 celery stalks, chopped
  • 1 tbsp tomato paste
  • 1 cup red wine (optional, or use extra beef stock)
  • 3 cups beef stock
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme or rosemary
  • 2 bay leaves
  • Salt and black pepper (to taste)

For the Dumplings:

  • 1 cup self-rising flour
  • ½ tsp salt
  • 2 tbsp unsalted butter (cold, cubed)
  • ¼ cup milk
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

Preparing the Beef Stew:

  1. Season and coat the beef – Pat dry and toss with flour, salt, and black pepper for a golden crust.
  2. Sear the beef – Heat olive oil in a large pot over medium-high heat. Brown the beef in batches, then set aside.
  3. Sauté the vegetables – In the same pot, cook onions, carrots, and celery for 5 minutes until softened. Add garlic and cook for 30 seconds.
  4. Deglaze with wine – Stir in tomato paste and pour in red wine, scraping up the browned bits. Simmer for 2 minutes to reduce.
  5. Add stock and herbs – Pour in beef stock, Worcestershire sauce, thyme, and bay leaves. Return the beef to the pot and bring to a boil.
  6. Slow-cook the stew – Cover and simmer on low heat for 1.5 to 2 hours, until the beef is tender.

Making the Dumplings:

  1. Prepare the dough – In a bowl, mix self-rising flour, salt, and butter, rubbing the butter into the flour until crumbly.
  2. Form the dumplings – Stir in milk and parsley until a soft dough forms. Shape into small balls.

Cooking the Dumplings in the Stew:

  1. Add the dumplings – Drop them gently into the simmering stew.
  2. Cover and cook – Simmer covered for 15-20 minutes until dumplings are light and fluffy.
  3. Serve and enjoy – Garnish with fresh parsley and serve hot.
