  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • ½ cup beef stock
  • ½ cup sour cream
  • ½ teaspoon lemon juice (optional, for brightness)
  • 1 teaspoon fresh parsley, chopped (for garnish)

For Serving

  • Cooked egg noodles, rice, or mashed potatoes
  • Extra parsley and cracked black pepper for garnish

Instructions

Step 1: Prepare the Beef

  1. Season the beef: Pat the beef strips dry and season with salt, black pepper, and smoked paprika.
  2. Sear the beef: Heat 1 tablespoon olive oil in a skillet over high heat. Sear the beef for 1-2 minutes per side, then remove and set aside.

Step 2: Cook the Vegetables

  1. Sauté the onions: In the same pan, add 1 tablespoon butter and the chopped onions. Cook for 2 minutes until soft.
  2. Add the garlic and mushrooms: Stir in garlic and mushrooms, cooking until the mushrooms release their juices and turn golden brown (5 minutes).

Step 3: Make the Sauce

  1. Deglaze the pan: Stir in Worcestershire sauce and Dijon mustard, scraping up any browned bits.
  2. Add the beef stock: Pour in the stock and simmer for 5 minutes until slightly reduced.
  3. Stir in the sour cream: Reduce the heat to low and mix in the sour cream. Add lemon juice for extra brightness.

Step 4: Combine and Serve

  1. Return the beef: Add the seared beef back to the pan and stir to coat in the sauce. Simmer for 2 minutes until heated through.
  2. Garnish and serve: Sprinkle with chopped parsley and serve over egg noodles, rice, or mashed potatoes.
