Gordon Ramsay’s Beef Wellington Bites are small, individual portions of Beef Wellington, made by wrapping seared beef in mushroom duxelles and puff pastry, then baking until golden brown. They maintain all the rich, savory flavors of the classic dish, but in a convenient, handheld size.

For the Beef:

  • 1 lb beef tenderloin (cut into 1-inch cubes)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp Dijon mustard

For the Mushroom Duxelles:

  • 1 cup cremini or button mushrooms, finely chopped
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1 tbsp shallots, finely chopped
  • ½ tsp thyme, chopped
  • 1 tbsp white wine or beef broth
  • Salt and black pepper (to taste)

For the Pastry:

  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg yolk (beaten with 1 tbsp water for egg wash)

Instructions

Prepare the Beef:

  1. Season the beef – Pat the beef dry and season with salt and black pepper.
  2. Sear in a hot pan – Heat olive oil in a skillet over high heat and sear beef cubes for 30 seconds per side until browned.
  3. Coat with Dijon mustard – Remove from heat and brush each beef cube with Dijon mustard.

Make the Mushroom Duxelles:

  1. Sauté mushrooms and shallots – Melt butter in a pan, then add mushrooms, shallots, and garlic. Cook until soft and moisture evaporates.
  2. Add thyme and wine – Stir in thyme and white wine, cooking until absorbed. Season with salt and black pepper, then let cool.

Assemble the Wellington Bites:

  1. Cut the puff pastry – Roll out the puff pastry and cut into 2-inch squares.
  2. Layer the ingredients – Place 1 tsp mushroom duxelles in the center of each square, then add a seared beef cube on top.
  3. Wrap and seal – Fold the pastry around the beef and pinch the edges to seal. Place seam-side down on a lined baking sheet.
  4. Brush with egg wash – Lightly coat each Wellington bite with the egg yolk wash for a golden finish.

Bake the Wellington Bites:

  1. Preheat oven to 400°F (200°C) – Bake for 15-18 minutes or until the pastry is golden brown and crisp.

Serve and Enjoy:

  1. Let cool slightly – Allow to rest for 5 minutes, then serve warm with a dipping sauce.
