Gordon Ramsay’s Blondies are buttery, chewy dessert bars, similar to brownies but without cocoa powder. Instead, they get their deep caramel-like flavor from brown sugar and vanilla, often enhanced with chocolate chips, nuts, or white chocolate.

  • 1 ½ cups brown sugar (light or dark)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup white or dark chocolate chips (optional)
  • ½ cup chopped walnuts or pecans (optional)

For Garnish (Optional):

  • Sea salt flakes – For a sweet-salty contrast.
  • Drizzle of caramel or melted chocolate – Extra indulgence.

Instructions

Prepare the Batter:

  1. Preheat oven to 350°F (175°C).
  2. Line a baking pan (9×9-inch) with parchment paper.
  3. Whisk melted butter and brown sugar in a large bowl until smooth.
  4. Add eggs and vanilla extract – Mix until fully combined.

Combine Dry Ingredients:

  1. In a separate bowl, whisk flour, baking powder, and salt.
  2. Gradually fold dry ingredients into the wet mixture – Do not overmix.
  3. Stir in chocolate chips or nuts (if using).

Bake the Blondies:

  1. Spread the batter evenly into the baking pan.
  2. Bake for 25-30 minutes or until the edges are golden and the center is slightly soft.

Cool and Serve:

  1. Let the blondies cool in the pan for 10 minutes.
  2. Slice into squares and enjoy!
