Gordon Ramsay Bread and Butter Pudding

Gordon Ramsay’s Bread and Butter Pudding is a traditional British dessert made by layering buttered bread slices in a baking dish, soaking them in a sweet, spiced custard, and baking until golden and crisp on top while staying soft inside. The pudding can be enhanced with raisins, cinnamon, or chocolate for extra flavor.

Ingredients

  • 6 slices brioche or white bread, slightly stale
  • 2 tbsp unsalted butter, softened
  • 2 cups whole milk
  • ½ cup heavy cream
  • 3 large eggs
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ cup raisins or sultanas (optional)
  • 1 tbsp brown sugar (for topping)

For Serving (Optional):

 

  • Whipped cream or custard
  • Fresh berries
  • Powdered sugar
  • Vanilla ice cream

Instructions

Prepare the Bread and Dish:

  1. Preheat oven to 350°F (175°C).
  2. Butter the bread slices – Spread butter on both sides of each slice.
  3. Cut the bread into triangles – Arrange them in a buttered baking dish, slightly overlapping.

Make the Custard:

  1. Heat the milk and cream – In a saucepan, warm milk, cream, and vanilla over medium heat until just steaming (do not boil).
  2. Whisk eggs, sugar, and cinnamon – In a separate bowl, beat together eggs, sugar, and cinnamon until smooth.
  3. Combine with warm milk – Slowly pour the warm milk mixture into the eggs while whisking constantly to prevent curdling.

Assemble and Bake:

  1. Pour custard over the bread – Allow it to soak for 10 minutes.
  2. Sprinkle brown sugar on top – Adds a caramelized crust.
  3. Bake for 35-40 minutes – Until golden brown and set but slightly soft in the center.

Serve and Enjoy:

 

  1. Let it cool for 5 minutes – Then serve warm with custard, whipped cream, or ice cream.
