  • ½ teaspoon onion powder
  • 1 cup (100g) shredded cheddar or Gruyère cheese
  • ½ cup (50g) Parmesan cheese, grated
  • 2 sausage links (or ½ lb ground sausage), cooked and crumbled
  • 1 cup diced bell peppers (red, green, or yellow)
  • ½ cup red onion, finely chopped
  • 1 cup baby spinach, chopped
  • 1 cup cubed bread (day-old works best)
  • 1 tablespoon olive oil (for cooking vegetables)
  • 1 tablespoon fresh parsley or chives, chopped (for garnish)

Instructions

  1. Preheat the oven – Set your oven to 375°F (190°C) and grease a baking dish with butter or cooking spray.
  2. Cook the sausage – In a skillet over medium heat, cook sausage until browned. Drain excess fat and set aside.
  3. Sauté the vegetables – In the same skillet, heat olive oil and cook bell peppers, onions, and spinach for 3-4 minutes until softened.
  4. Whisk the egg mixture – In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, onion powder, and red pepper flakes.
  5. Layer the ingredients – Spread cubed bread evenly in the baking dish. Add the cooked sausage, sautéed vegetables, and shredded cheese on top.
  6. Pour the egg mixture – Evenly distribute the egg mixture over the layered ingredients, ensuring everything is well coated.
  7. Top with Parmesan – Sprinkle grated Parmesan over the top for extra flavor.
  8. Bake until golden – Place in the oven and bake for 35-40 minutes or until the center is set and the top is golden brown.
  9. Cool and garnish – Let the casserole rest for 5 minutes before slicing. Garnish with fresh parsley or chives and serve warm.
