Whether you’re grilling or using a stovetop pan, this method delivers a restaurant-quality burger at home.

Ingredients

Scale
  • 1 lb (450g) ground beef (80/20 blend)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil (for cooking)
  • 1 tbsp butter (for extra juiciness)

Instructions

  • Prepare the beef mixture – In a bowl, mix ground beef, salt, black pepper, garlic powder, smoked paprika, Dijon mustard, and Worcestershire sauce until just combined.
  • Form the patties – Divide the mixture into two equal portions and shape into patties about ¾-inch thick. Make a slight indentation in the center to prevent puffing during cooking.
  • Preheat the pan or grill – Heat a cast-iron skillet or grill over high heat until smoking hot.
  • Sear the patties – Add olive oil, then place the patties in the pan. Cook for 2-3 minutes per side without pressing down to maintain juiciness.
  • Add butter for extra flavor – In the last minute of cooking, add butter to the pan and baste the patties for extra moisture and richness.
  • Rest the burgers – Remove from heat and let them rest for 2-3 minutes before assembling.
  • Assemble and serve – Place on a toasted bun with your favorite toppings and enjoy!
