Gordon Ramsay’s Butter Poached Lobster is a gentle cooking method where lobster meat is slowly poached in melted butter at a low temperature. This prevents the lobster from becoming tough or chewy while enhancing its natural sweetness and luxurious texture.

  • 2 lobster tails (or whole lobsters, shells removed)
  • 1 cup unsalted butter, cubed
  • 1 tbsp water (to help emulsify the butter)
  • 1 clove garlic, minced
  • 1 sprig of fresh thyme
  • 1 sprig of fresh tarragon (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions

Prepare the Lobster:

  1. Remove lobster meat – Carefully remove the lobster meat from the shells, keeping it intact.
  2. Season lightly – Sprinkle with salt and black pepper.

Make the Butter Poaching Liquid:

  1. Melt butter gently – In a small saucepan over low heat, add water and butter cubes, stirring to create an emulsified butter sauce.
  2. Infuse with aromatics – Add garlic, thyme, and tarragon for extra flavor.

Poach the Lobster:

  1. Keep heat low – The butter should be warm but not bubbling (around 160-180°F or 70-80°C).
  2. Gently add lobster – Submerge the lobster meat in the butter and poach for 5-7 minutes, turning occasionally.
  3. Check doneness – The lobster is ready when it turns opaque and slightly firm, but still tender.

Finish and Serve:

  1. Add lemon juice – Just before serving, squeeze in fresh lemon juice for brightness.
  2. Plate and enjoy – Serve warm with extra melted butter or over pasta, risotto, or salad.
