Gordon Ramsay Butternut Squash Purée Recipe

Gordon Ramsay Butternut Squash Purée recipe

Gordon Ramsay’s butternut squash purée is a creamy and sophisticated take on the classic side dish. The squash is roasted to enhance its natural sweetness and blended with butter, cream, and seasonings for a silky-smooth consistency. Unlike mashed squash, this purée is refined, with a luxurious texture that elevates any meal.

Ingredients

Scale
  • 1 medium butternut squash (about 2 lbs), peeled, seeded, and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • ¼ cup (60ml) heavy cream or milk
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground nutmeg (optional, for warmth)
  • 1 teaspoon honey or maple syrup (optional, for extra sweetness)

Instructions

  1. Preheat the oven – Set to 400°F (200°C) for optimal roasting.
  2. Prepare the squash – Peel, remove seeds and cut into 1-inch cubes.
  3. Season and roast – Toss the squash with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 25-30 minutes until soft and caramelized.
  4. Blend until smooth – Transfer the roasted squash to a blender or food processor. Add butter, cream, and nutmeg. Blend until silky.
  5. Adjust seasoning – Taste and adjust with more salt, pepper, or a drizzle of honey for balance.
  6. Serve warm – Spoon onto plates and pair with your favorite main dish.
