  • 1 teaspoon Worcestershire sauce (optional, for depth)
  • 1 bay leaf
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 teaspoon lemon juice (optional, for brightness)

Instructions

Prepare the Base:

  1. Heat the olive oil – In a large pot over medium heat, add the olive oil.
  2. Sauté the aromatics – Add the onions, garlic, carrots, and celery. Sauté for about 5 minutes until softened.

Cook the Soup:

  1. Add the cabbage – Stir in the chopped cabbage and cook for 3-4 minutes, allowing it to slightly soften.
  2. Pour in the liquids – Add the diced tomatoes (with their juices) and vegetable or chicken broth. Stir well.
