Gordon Ramsay Cauliflower Soup

Gordon Ramsay’s Cauliflower Soup is a simple yet sophisticated dish that highlights the nutty, sweet flavor of cauliflower. Blended with aromatics, cream, and a touch of seasoning, this soup achieves a silky texture and a balanced flavor that’s both comforting and refined.

Ingredients

Scale
  • 1 large cauliflower, chopped into florets
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable or chicken stock
  • 1/2 cup heavy cream (optional)
  • 1 tsp ground nutmeg (optional)
  • Salt and pepper, to taste
  • Chopped chives or crispy croutons, for garnish

Instructions

Prepare the Ingredients:

    • Chop the cauliflower: Separate the cauliflower into small, even-sized florets for quick and uniform cooking.

    • Dice the aromatics: Finely chop the onion and mince the garlic.

Cook the Soup:

    • Heat the olive oil: In a large pot, heat the olive oil over medium heat.

    • Sauté the aromatics: Add the onion and garlic, cooking until softened and fragrant, about 3-4 minutes.

    • Add the cauliflower: Stir in the cauliflower florets and cook for 2-3 minutes, coating them with the aromatic mixture.

    • Pour in the stock: Add the vegetable or chicken stock, ensuring the cauliflower is fully submerged. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the cauliflower is tender.

Blend and Finish:

    • Blend the soup: Use an immersion blender to puree the soup until smooth. Alternatively, transfer it in batches to a countertop blender.

    • Add cream and seasonings: Stir in the heavy cream for a richer texture and add nutmeg, if desired. Season with salt and pepper to taste.

Serve and Garnish:

    • Ladle the soup into bowls and garnish with chopped chives, crispy croutons, or a drizzle of olive oil.

    • Serve hot and enjoy!
