For the Cauliflower Steaks

  • 1 large cauliflower head
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin (optional, for warmth)
  • ½ teaspoon chili flakes (optional, for heat)

For Garnish & Serving

  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon balsamic glaze (optional)

Instructions

Step 1: Prepare the Cauliflower

  1. Preheat the oven to 400°F (200°C).
  2. Trim the leaves and stem from the cauliflower, keeping the core intact.
  3. Slice into steaks: Cut the cauliflower into 1-inch thick slices from top to bottom.

Step 2: Season the Steaks

  1. Mix the seasonings: In a small bowl, combine olive oil, salt, black pepper, smoked paprika, garlic powder, cumin, and chili flakes.
  2. Brush both sides of the cauliflower steaks with the seasoned oil mixture.

Step 3: Sear the Cauliflower

  1. Heat a large skillet over medium-high heat and add 1 tablespoon olive oil.
  2. Sear the cauliflower steaks for 2-3 minutes per side until golden brown and caramelized.

Step 4: Roast to Perfection

  1. Transfer to the oven: Place the seared cauliflower steaks on a baking sheet.
  2. Roast for 15-20 minutes, flipping once, until tender but crispy on the edges.

Step 5: Garnish and Serve

  1. Drizzle with lemon juice and zest, then sprinkle with fresh parsley.
  2. Optional: Add a balsamic glaze drizzle for extra depth of flavor.
