  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1 cup chicken stock
  • 1 cup heavy cream (or whole milk for a lighter option)
  • 1 tbsp Dijon mustard (optional)
  • ½ cup frozen peas
  • 2 cups cooked chicken, shredded or diced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika (optional)

For serving:

  • Cooked rice, pasta, toast, or biscuits
  • Chopped fresh parsley for garnish

Instructions

Step 1: Sauté the Vegetables

  1. Heat butter and olive oil in a large pan over medium heat.
  2. Sauté onions, garlic, and bell peppers for 3-4 minutes until softened.
  3. Add mushrooms and cook for 5 minutes until tender.

Step 2: Make the Creamy Sauce

  1. Sprinkle flour over the vegetables and stir for 1 minute to cook out the raw taste.
  2. Slowly whisk in chicken stock, stirring continuously to prevent lumps.
  3. Pour in heavy cream and Dijon mustard (if using). Let simmer for 5 minutes until thickened.

Step 3: Add the Chicken & Peas

  1. Stir in shredded cooked chicken and frozen peas.
  2. Season with salt, black pepper, and smoked paprika.
  3. Simmer for another 2-3 minutes until everything is heated through.

Step 4: Serve & Enjoy

  1. Spoon the Chicken à la King over rice, pasta, toast, or biscuits.
