  • For the chicken:

    • 4 bone-in, skin-on chicken thighs or drumsticks
    • 2 tbsp olive oil
    • 1 tbsp unsalted butter
    • Salt and black pepper (to taste)
  • For the casserole base:

    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 2 carrots, sliced
    • 2 celery stalks, chopped
    • 1 cup mushrooms, sliced
    • 1 cup baby potatoes, halved
    • 1 cup chicken broth
    • ½ cup dry white wine (optional)
    • 1 tbsp tomato paste
    • 1 tsp Dijon mustard
    • 1 tsp fresh thyme leaves
    • 1 tsp fresh rosemary, chopped
    • 1 bay leaf

Instructions

  1. Sear the chicken – Heat olive oil in a large casserole dish, season the chicken, and brown on both sides. Remove and set aside.
  2. Sauté the vegetables – In the same dish, cook onions, garlic, carrots, and celery until softened.
  3. Add mushrooms and potatoes – Stir in mushrooms and baby potatoes, cooking for 2 minutes.
  4. Deglaze with wine – Pour in white wine (if using) and let it reduce slightly.
  5. Incorporate the sauce ingredients – Stir in tomato paste, Dijon mustard, and chicken broth.
  6. Simmer with herbs – Add thyme, rosemary, and a bay leaf, then return the chicken to the pot.
  7. Slow cook to perfection – Cover and let simmer on low heat for 40-45 minutes, until the chicken is tender.
  8. Serve hot – Remove the bay leaf, garnish with fresh herbs, and enjoy!
