  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp dried thyme or rosemary

  • 1 tsp salt

  • ½ tsp black pepper

  • Juice of ½ lemon

  • 1 tbsp butter (for finishing)

  • 2 cloves garlic, smashed

  • Fresh parsley (for garnish, optional)

Instructions

Season the Drumsticks:

  • Pat the chicken dry with paper towels to help the skin crisp up.

  • In a bowl, mix olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper.

  • Toss the drumsticks in the seasoning mixture to coat them evenly.

Sear for Flavor (Optional but Recommended):

  • Heat a skillet over medium-high heat with a touch of oil.

  • Sear the drumsticks on all sides for 2–3 minutes until golden brown.

Roast in the Oven:

  • Preheat oven to 400°F (200°C).

  • Transfer drumsticks to a baking tray or oven-safe skillet.

  • Add smashed garlic cloves and dots of butter around the drumsticks.

  • Roast for 25–30 minutes, turning once, until the skin is crispy and internal temperature reaches 165°F (74°C).

Finish and Serve:

  • Squeeze lemon juice over the drumsticks, garnish with fresh parsley, and serve hot.
