Chicken Fried Steak is a Southern dish made with tenderized beef, breaded and fried to crispy perfection, much like fried chicken. Despite its name, there’s no chicken involved—the name comes from the method of frying the steak like chicken. It’s traditionally served with creamy white gravy and classic Southern sides.

For the Steak:

  • 4 cube steaks (or round steak, pounded thin)
  • 1 ½ cups all-purpose flour
  • ½ cup cornstarch (for extra crispiness)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp cayenne pepper (optional, for heat)
  • 2 large eggs
  • ½ cup buttermilk
  • 1 tbsp hot sauce (optional, for extra flavor)
  • Vegetable oil (for frying)

For the Creamy Country Gravy:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

Instructions

  1. Prepare the beef – Pat the steaks dry with paper towels and season both sides with salt and black pepper.
  2. Set up the breading station – In one bowl, mix flour, cornstarch, paprika, garlic powder, cayenne, salt, and black pepper. In another bowl, whisk eggs, buttermilk, and hot sauce.
  3. Dredge the steaks – Coat each steak in the flour mixture, then dip into the egg mixture, and coat again in flour. Press the flour onto the steak for a crispier crust.
  4. Heat the oil – In a deep skillet, heat vegetable oil to 350°F (175°C). There should be enough oil to cover half the steak’s thickness.
  5. Fry the steaks – Cook each steak for 3-4 minutes per side until golden brown and crispy. Drain on a wire rack or paper towel.
  6. Make the gravy – In the same pan, melt butter and whisk in flour. Cook for 1 minute, then gradually add milk, whisking constantly. Season with salt, black pepper, and garlic powder. Simmer until thickened.
  7. Serve immediately – Pour the creamy gravy over the fried steaks and enjoy with your favorite sides.
