Gordon Ramsay’s Chicken Parmigiana (also called Chicken Parmesan) is a breaded, pan-fried chicken breast, topped with homemade tomato sauce and melted cheese, then baked until bubbly and golden. This version enhances the traditional recipe by using panko breadcrumbs for extra crunch, a garlic-infused tomato sauce, and a blend of Parmesan and mozzarella for rich flavor.

For the Chicken:

  • 2 chicken breasts, butterflied and pounded thin
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • ½ cup Parmesan cheese, grated
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 3 tbsp olive oil

For the Tomato Sauce:

  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • ½ tsp red pepper flakes (optional)
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh basil, chopped

For Topping:

  • 1 cup mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • 1 tbsp fresh basil, chopped (for garnish)

Instructions

Prepare the Chicken:

  1. Preheat oven to 400°F (200°C) – Line a baking sheet with parchment paper.
  2. Butterfly and pound the chicken – Slice each chicken breast in half lengthwise and pound to ½-inch thickness.
  3. Set up a breading station – Place flour in one bowl, beaten eggs in another, and mix panko, Parmesan, garlic powder, salt, pepper, and paprika in a third.
  4. Bread the chicken – Dredge each chicken piece in flour, then egg, then the breadcrumb mixture, pressing to coat evenly.

Pan-Fry the Chicken:

  1. Heat olive oil in a skillet over medium heat – Once hot, add breaded chicken.
  2. Cook for 3-4 minutes per side – Until golden brown and crispy. Transfer to a paper towel-lined plate.

Make the Tomato Sauce:

  1. Sauté garlic in olive oil – Cook over medium heat for 30 seconds.
  2. Simmer the sauce – Add crushed tomatoes, red pepper flakes, oregano, salt, and pepper. Simmer for 10 minutes, then stir in fresh basil.

Assemble and Bake:

  1. Place chicken on a baking sheet – Spoon tomato sauce over each piece.
  2. Top with mozzarella and Parmesan – Bake for 10 minutes, until the cheese is melted and bubbly.
  3. Broil for 2 minutes – For a golden, slightly crispy top.

Serve and Enjoy:

  1. Garnish with fresh basil – Serve hot with pasta, salad, or garlic bread.
