  • ½ cucumber, sliced
  • ¼ red onion, thinly sliced
  • ½ cup shredded carrots
  • ¼ cup toasted almonds or walnuts
  • ¼ cup feta or Parmesan cheese (optional)

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional, for balance)
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Prepare the Chicken:

  1. Season the chicken – Rub chicken breasts with olive oil, salt, black pepper, paprika, garlic powder, and oregano.
  2. Grill or pan-sear – Heat a grill pan or skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden and fully cooked (internal temperature of 165°F/75°C).
  3. Rest and slice – Let the chicken rest for 5 minutes before slicing into strips.

Prepare the Dressing:

  1. Whisk ingredients together – In a small bowl, whisk olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and black pepper until emulsified.

Assemble the Salad:

  1. Arrange the greens – In a large bowl or serving platter, spread the mixed greens evenly.
