Gordon Ramsay’s chicken stir fry is a savory, slightly spicy dish featuring thinly sliced chicken, crisp vegetables, and a well-balanced sauce made with soy sauce, garlic, ginger, and sesame oil. It’s cooked quickly over high heat for a restaurant-quality finish.

For the chicken stir fry:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tbsp cornstarch (for coating)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil (for stir-frying)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp red pepper flakes (optional)

For the stir fry sauce:

  • ¼ cup soy sauce (low sodium)
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch (mixed with 2 tbsp water)

Instructions

Step 1: Prepare the Chicken

  1. Coat the chicken – Toss sliced chicken with cornstarch and soy sauce. Let sit for 5 minutes.

Step 2: Make the Stir Fry Sauce

  1. Mix the sauce – In a bowl, whisk together soy sauce, oyster sauce, hoisin sauce, honey, rice vinegar, sesame oil, and cornstarch slurry.

Step 3: Stir-Fry the Chicken

  1. Heat the pan – In a wok or large skillet, heat vegetable oil over high heat.
  2. Cook the chicken – Add the chicken and stir-fry for 3-4 minutes until golden brown. Remove and set aside.

Step 4: Cook the Vegetables

  1. Sauté aromatics – In the same pan, add garlic, ginger, and red pepper flakes. Stir-fry for 30 seconds.
  2. Add vegetables – Toss in bell peppers, broccoli, and carrots. Stir-fry for 2-3 minutes until slightly tender but still crisp.

Step 5: Combine and Finish

  1. Return chicken to pan – Add the chicken back to the pan.
  2. Pour in the sauce – Stir well and cook for 1-2 minutes until the sauce thickens and coats the ingredients.
  3. Garnish and serve – Sprinkle with green onions and serve hot.
