  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 large carrot, grated

For the Dressing

  • ½ cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon lemon juice (or apple cider vinegar)
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For Garnish & Serving

  • Extra parsley for a fresh touch
  • Lemon wedges for squeezing over before serving

Instructions

Step 1: Prepare the Vegetables

  1. Finely shred the green and red cabbage.
  2. Grate the carrot and thinly slice the red onion.
  3. Place all vegetables in a large mixing bowl.

Step 2: Make the Dressing

  1. In a small bowl, whisk together mayonnaise, Dijon mustard, honey, lemon juice, salt, and black pepper.
  2. Taste and adjust seasoning if needed.

Step 3: Mix and Serve

  1. Pour the dressing over the shredded vegetables.
  2. Toss well until all the vegetables are evenly coated.
  3. Garnish with fresh parsley and serve immediately, or let it sit for 15 minutes for flavors to meld.
