Instructions

  1. Prepare the ingredients: Gather all the ingredients and chop the vegetables into small, uniform pieces for even cooking.
  2. Heat the vegetable oil: Warm the vegetable oil in a large pan or wok over medium-high heat.
  3. Sauté the aromatics: Add the minced garlic, grated ginger, and chopped onions to the pan, stirring until fragrant.
  4. Cook the vegetables: Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are slightly tender but still crisp.
  5. Scramble the eggs: Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble them until cooked, then mix them with the vegetables.
