Gordon Ramsay’s Gazpacho is a traditional Spanish cold soup, blended to a smooth, velvety consistency. Unlike cooked tomato soups, gazpacho is raw, allowing the fresh ingredients to shine. The balance of acidity from vinegar, sweetness from ripe tomatoes, and a hint of spice from garlic creates a refreshing and flavorful dish.

For the Gazpacho Base

  • 6 ripe tomatoes, chopped
  • 1 small cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • ½ small red onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons sherry vinegar (or red wine vinegar)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional, for depth)
  • ½ teaspoon cumin (optional, for warmth)
  • 1 cup cold water (or adjust for desired consistency)

For Garnish & Serving

  • Extra virgin olive oil drizzle
  • Fresh basil or parsley, chopped
  • Diced cucumber and bell pepper
  • Croutons or toasted bread
  • Cracked black pepper

Instructions

Step 1: Prepare the Ingredients

  1. Roughly chop the tomatoes, cucumber, red bell pepper, red onion, and garlic.
  2. Transfer to a blender or food processor.

Step 2: Blend the Gazpacho

  1. Add olive oil, vinegar, salt, black pepper, paprika, and cumin to the blender.
  2. Blend until smooth, adding cold water as needed for the desired consistency.

Step 3: Chill the Soup

  1. Strain the gazpacho through a fine-mesh sieve for a smoother texture (optional).
  2. Refrigerate for at least 2 hours to allow flavors to develop.

Step 4: Serve and Garnish

  1. Ladle into bowls and garnish with diced cucumber, bell pepper, croutons, and a drizzle of olive oil.
  2. Serve cold with toasted bread on the side.
