For the Salad:

  • 3 large ripe tomatoes, cut into wedges
  • 1 medium cucumber, sliced
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives
  • 1 bell pepper (red or green), sliced
  • 6 oz (170g) feta cheese, cut into cubes or crumbled
  • 1 teaspoon dried oregano
  • Fresh parsley (optional, for garnish)

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard (optional, for extra tang)
  • 1 small clove garlic, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

Prepare the Vegetables:

  1. Slice the ingredients – Cut the tomatoes into wedges, slice the cucumber into half-moons, and thinly slice the red onion and bell pepper.
  2. Add olives and feta – Toss the vegetables in a large mixing bowl and add the Kalamata olives and feta cheese.

Make the Dressing:

  1. Whisk the ingredients – In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper until well combined.

Assemble the Salad:

  1. Toss with dressing – Drizzle the dressing over the salad and toss gently to combine, making sure everything is well coated.
  2. Garnish and serve – Sprinkle dried oregano on top and garnish with fresh parsley if desired. Serve immediately.
