  • 2 slices of sourdough bread
  • 2 tbsp butter (softened)
  • 1 tbsp olive oil
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup kimchi (drained and chopped)
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

Instructions

  1. Prepare the cheese blend – In a bowl, mix the mozzarella, cheddar, and Parmesan cheese.
  2. Butter the bread – Spread softened butter evenly on both sides of each bread slice.
  3. Add seasonings – Sprinkle garlic powder and smoked paprika over the buttered sides.
  4. Toast the bread – Heat olive oil in a pan over medium-low heat. Place both slices of bread in the pan and lightly toast one side.
  5. Assemble the sandwich – Flip the bread, spread Dijon mustard on the toasted side, and layer the cheese blend on one slice. Add the chopped kimchi on top.
  6. Melt the cheese – Place the other slice of bread on top (toasted side facing in) and press gently. Cook on low heat for 3-4 minutes per side, flipping carefully until the cheese is fully melted and the bread is golden brown.
  7. Serve immediately – Remove from heat, let it cool for a minute, then slice and enjoy!
