For the Herb Butter (Optional):

  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon fresh parsley, chopped
  • ½ teaspoon fresh thyme, chopped
  • ½ teaspoon garlic, minced

Instructions

Marinate the Chicken:

  1. Prepare the marinade – In a small bowl, mix olive oil, salt, black pepper, smoked paprika, garlic powder, dried oregano, chili flakes, lemon zest, and lemon juice.
  2. Coat the chicken – Rub the marinade all over the chicken, ensuring even coverage. Let it sit for at least 15-20 minutes (or up to 2 hours for deeper flavor).

Grill the Chicken:

  1. Preheat the grill – Heat an outdoor grill or grill pan over medium-high heat and lightly grease with oil.
  2. Cook the chicken – Place the chicken on the grill and cook for 5-6 minutes per side (or until internal temperature reaches 165°F/75°C).
  3. Add herb butter (optional) – Brush the melted herb butter over the chicken during the last 2 minutes of grilling for extra flavor.
