Gordon Ramsay’s Lasagne Al Forno is a traditional oven-baked Italian lasagna, made with a slow-simmered Bolognese sauce layered between fresh pasta sheets and a creamy béchamel sauce. Unlike American-style lasagna, which often includes ricotta, this version sticks to the classic Italian method with a smooth, velvety white sauce.

For the Bolognese Sauce

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cloves garlic, minced
  • 1 lb (450g) ground beef (or a mix of beef and pork)
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • ½ cup red wine (optional, for depth)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ cup beef stock
  • 1 teaspoon sugar (optional, balances acidity)

For the Béchamel Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ¼ teaspoon nutmeg (optional, for warmth)
  • ½ teaspoon salt
  • ½ teaspoon white pepper
  • ½ cup grated Parmesan cheese

For Assembling the Lasagne

  • 912 lasagne sheets (fresh or no-boil)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

Step 1: Make the Bolognese Sauce

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté onion, carrot, celery, and garlic for 5 minutes until softened.
  3. Add ground beef and cook for 5-7 minutes, breaking it up until browned.
  4. Stir in tomato paste, oregano, thyme, Worcestershire sauce, salt, and black pepper.
  5. Pour in red wine and let it reduce for 2 minutes.
  6. Add crushed tomatoes and beef stock. Simmer for 20 minutes until thickened.

Step 2: Prepare the Béchamel Sauce

  1. Melt butter in a saucepan over medium heat.
  2. Whisk in flour and cook for 1-2 minutes until slightly golden.
  3. Slowly add milk, whisking continuously until smooth.
  4. Season with salt, white pepper, and nutmeg.
  5. Stir in Parmesan cheese until melted. Set aside.

Step 3: Assemble the Lasagne

  1. Preheat oven to 375°F (190°C).
  2. Spread a thin layer of Bolognese sauce on the bottom of a baking dish.
  3. Add a layer of lasagne sheets, followed by Bolognese, then béchamel. Repeat layers until all ingredients are used.
  4. Top with mozzarella and Parmesan cheese.

Step 4: Bake the Lasagne

  1. Bake for 30-35 minutes until golden and bubbling.
  2. Let rest for 10 minutes before slicing.

Step 5: Garnish and Serve

  1. Garnish with fresh basil or parsley and serve hot.
