  • For the lobster:

    • 2 whole lobsters (or 1 lb of cooked lobster meat)
    • 2 tbsp unsalted butter
    • 1 tbsp olive oil
    • Salt and black pepper (to taste)
  • For the salad:

    • 4 cups mixed greens (arugula, baby spinach, or butter lettuce)
    • ½ cup cherry tomatoes, halved
    • ½ avocado, sliced
    • ¼ cup radishes, thinly sliced
    • 1 tbsp chives, finely chopped
  • For the dressing:

    • 3 tbsp olive oil
    • 1 tbsp lemon juice
    • 1 tsp Dijon mustard
    • 1 tsp honey
    • ½ tsp salt
    • ¼ tsp black pepper

Instructions

  1. Cook the lobster – Boil the lobsters for 8-10 minutes, then cool and remove the meat.
  2. Sauté the lobster meat – Heat butter and olive oil in a pan, then lightly sauté the lobster meat for 1-2 minutes.
  3. Prepare the dressing – Whisk together olive oil, lemon juice, mustard, honey, salt, and black pepper.
  4. Assemble the salad – In a large bowl, toss mixed greens, tomatoes, avocado, radishes, and chives.
  5. Add the lobster – Arrange the warm lobster meat on top of the salad.
  6. Drizzle with dressing – Pour the dressing over the salad and gently toss.
  7. Serve immediately – Enjoy fresh with a slice of crusty bread or on its own.
