Gordon Ramsay London Broil

Gordon Ramsay’s London Broil is a marinated and seared top round steak, traditionally grilled or broiled at high heat, then sliced thinly against the grain for a juicy, tender bite. The marinade infuses rich flavors of garlic, Worcestershire sauce, soy sauce, and fresh herbs, making it a budget-friendly yet steakhouse-quality dish.

For the Marinade:

  • ¼ cup olive oil
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp honey or brown sugar
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme leaves
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for heat)

For the London Broil:

 

  • 1.52 lbs top round steak (London broil cut)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter (for finishing)

Instructions

Marinate the Steak:

  1. Mix the marinade – In a bowl, whisk together olive oil, Worcestershire sauce, soy sauce, balsamic vinegar, garlic, Dijon mustard, honey, rosemary, thyme, black pepper, and red pepper flakes.
  2. Marinate the steak – Place the top round steak in a zip-top bag, pour the marinade over it, seal, and refrigerate for at least 4 hours (overnight for best results).

Cook the London Broil:

  1. Preheat the oven and pan – Heat a cast-iron skillet or oven-safe pan over high heat and preheat the oven to 400°F (200°C).
  2. Pat the steak dry – Remove from the marinade and pat dry with paper towels. Season both sides with salt and black pepper.
  3. Sear the steak – Add olive oil to the hot pan, then sear the steak for 2-3 minutes per side until a brown crust forms.
  4. Finish in the oven – Transfer the pan to the oven and cook for 5-7 minutes, or until the internal temperature reaches:
    • 125°F (52°C) for rare
    • 130°F (54°C) for medium-rare
    • 140°F (60°C) for medium
  5. Rest the steak – Remove from the oven, add butter, and tent with foil for 10 minutes before slicing.

Slice and Serve:

 

  1. Slice against the grain – Cut thin slices at a 45-degree angle to ensure tenderness.
  2. Serve immediately – Enjoy with your favorite sides or over salads, sandwiches, or wraps.
