For the Meatballs

  • 1 lb ground beef
  • ¼ cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • ¼ cup Parmesan cheese, grated
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped

For the Soup

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) crushed tomatoes
  • 4 cups beef or chicken stock
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ cup small pasta (or rice, optional)
  • 1 cup baby spinach or kale (optional, for extra nutrition)

For Garnish

 

  • Fresh parsley, chopped
  • Grated Parmesan cheese
  • Cracked black pepper

Instructions

Step 1: Make the Meatballs

  1. Prepare the meatball mixture: In a large bowl, combine ground beef, breadcrumbs, egg, garlic, Parmesan cheese, salt, pepper, smoked paprika, oregano, and parsley. Mix until well combined.
  2. Form the meatballs: Roll into small meatballs (about 1 inch in diameter).
  3. Brown the meatballs: Heat 1 tablespoon olive oil in a pot over medium-high heat. Sear the meatballs for 2-3 minutes, turning until browned on all sides. Remove and set aside.

Step 2: Cook the Soup Base

  1. Sauté the vegetables: In the same pot, add onion, garlic, carrot, and celery. Cook for 3-4 minutes until softened.
  2. Add tomatoes and broth: Stir in crushed tomatoes, beef stock, Worcestershire sauce, basil, thyme, salt, and pepper. Bring to a simmer.
  3. Return the meatballs: Gently add the browned meatballs back into the soup. Simmer for 15-20 minutes, stirring occasionally.

Step 3: Add Pasta or Greens (Optional)

  1. Cook the pasta: If using pasta, add it during the last 8-10 minutes of cooking. Stir occasionally to prevent sticking.
  2. Stir in greens: Add spinach or kale during the last 5 minutes to retain color and nutrients.

Step 4: Serve and Garnish

  1. Taste and adjust seasoning: Add more salt, pepper, or herbs if needed.
  2. Garnish and serve: Ladle into bowls and top with fresh parsley, grated Parmesan, and cracked black pepper. Serve hot with crusty bread.
