8 ozdark chocolate (70% cocoa), finely chopped
½ cupheavy cream
1 tbspunsalted butter
½ tspmint extract (or 6–8 fresh mint leaves)
1 tbsphoney or corn syrup (for extra smoothness)
¼ tspsalt

Melted dark or white chocolate (for dipping)
Finely chopped nuts (for crunch)
Instructions
Prepare the Ganache:
Heat the cream – In a saucepan, bring heavy cream and butter to a simmer over medium heat (do not boil).
Infuse with mint – If using fresh mint leaves, add them to the hot cream and let steep for 5 minutes, then strain.
Pour over chocolate – Place chopped chocolate in a bowl and pour the warm cream over it. Let sit for 2 minutes, then stir until smooth.
Add mint extract, honey, and salt – Mix well for enhanced flavor and silkiness.
Chill the Mixture:
Refrigerate for 2-3 hours – Until firm but scoopable.
Shape the Truffles:
Scoop and roll into balls – Use a teaspoon or melon baller to scoop and roll into bite-sized balls.
Coat the Truffles:
Roll in cocoa powder – For a traditional, dusted look.
Dip in melted chocolate – For a glossy, professional finish.
Sprinkle with chopped nuts – For extra crunch and decoration.
