  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped (optional)

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon red wine vinegar
  • 1 clove garlic, minced
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano

Instructions

Cook the Orzo:

  1. Boil water – Bring a large pot of salted water to a boil.
  2. Cook the pasta – Add the orzo and cook according to package instructions (about 8-10 minutes) until al dente.
  3. Drain and cool – Drain the orzo and rinse under cold water to stop cooking. Set aside to cool.

Prepare the Dressing:

  1. Whisk the ingredients – In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, red wine vinegar, minced garlic, salt, black pepper, and oregano.
