Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
  2. Add the finely chopped onion and cook for 3-4 minutes until soft and translucent.
  3. Stir in the garlic and cook for another minute until fragrant.

Step 2: Toast the Arborio Rice

  1. Add the Arborio rice to the pan, stirring continuously for 1-2 minutes to toast the grains slightly, which enhances the nutty flavor.
  2. Pour in the white wine and stir until fully absorbed.

Step 3: Gradually Add the Broth

  3. Continue this process for about 18-20 minutes until the rice is tender but slightly al dente.

Step 4: Finish with Butter and Parmesan

  1. Remove from heat and stir in the remaining butter, grated Parmesan cheese, and mascarpone (if using).
  2. Season with salt and black pepper, adjusting to taste.
