  • 3 ripe but firm pears, peeled, cored, and halved
  • ½ cup granulated sugar
  • 2 tbsp unsalted butter
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon (optional)
  • 1 sheet puff pastry, thawed
  • 1 egg yolk, beaten (for egg wash)

Instructions

Prepare the Caramelized Pears:

  1. Preheat oven to 375°F (190°C) – Set a 9-inch ovenproof skillet or tarte tatin pan on the stove.
  2. Make the caramel – In the skillet, melt sugar over medium heat, stirring occasionally until it turns a golden caramel color.
  3. Add butter and lemon juice – Stir in butter until smooth, then add vanilla extract and cinnamon.
  4. Arrange the pears – Place pears cut-side up in the caramel, cooking for 5 minutes to soften slightly.

Assemble the Tarte Tatin:

  1. Roll out puff pastry – Cut the pastry slightly larger than the pan’s size.
  2. Cover the pears with the pastry – Tuck in the edges to encase the fruit.
  3. Brush with egg wash – Creates a golden, glossy finish.

Bake and Flip the Tart:

  1. Bake for 25-30 minutes – Until the pastry is puffed and golden brown.
  2. Cool for 5 minutes – Let it set before flipping.
  3. Flip onto a plate – Carefully invert the tart so the pears face up.

Serve and Enjoy:

  1. Garnish with fresh herbs or powdered sugar – Optional but adds elegance.
  2. Serve warm with ice cream or whipped cream – For the perfect finishing touch.
