For the Shortcrust Pastry:

  • 1 ¼ cups (160g) all-purpose flour
  • ½ cup (115g) unsalted butter, cold and cubed
  • ¼ teaspoon salt
  • 23 tablespoons cold water

For the Filling:

  • 1 cup (240ml) heavy cream
  • 3 large eggs
  • ½ cup (120ml) whole milk
  • 1 cup (100g) Gruyère cheese, grated
  • 4 oz (120g) smoked bacon or pancetta, diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)

Instructions

  1. Prepare the shortcrust pastry – Combine flour, salt, and cold butter in a food processor. Pulse until it resembles breadcrumbs, then add cold water gradually and mix until the dough forms.
  2. Chill the dough – Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Roll out and fit into the pan – Roll the dough on a floured surface and fit it into a tart pan. Trim the edges and chill for another 15 minutes.
  4. Blind bake the crust – Preheat the oven to 375°F (190°C). Line the crust with parchment paper, fill with baking weights, and bake for 15 minutes. Remove the weights and bake for another 5 minutes until lightly golden.
  5. Cook the bacon – In a skillet, cook the diced bacon until crispy. Drain on paper towels.
  6. Whisk the filling – In a bowl, whisk eggs, heavy cream, milk, salt, pepper, and nutmeg. Stir in the grated cheese.
  7. Assemble the quiche – Spread the crispy bacon evenly over the crust, then pour in the egg mixture.
  8. Bake the quiche – Reduce oven temperature to 350°F (175°C) and bake for 30-35 minutes until the center is set.
  9. Cool and serve – Allow the quiche to cool slightly before slicing.
