  • 2 tablespoons cold water

For the Quiche Filling

  • 4 large eggs
  • 1 cup (240ml) heavy cream (or whole milk for a lighter version)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional, for depth of flavor)
  • 1 cup (100g) grated Gruyère or cheddar cheese

For the Add-Ins (Choose One or Combine)

  • Quiche Lorraine: ½ cup (100g) cooked bacon or pancetta, chopped
  • Vegetable Quiche: ½ cup sautéed mushrooms, spinach, or caramelized onions
  • Smoked Salmon Quiche: ½ cup smoked salmon and fresh dill

For Garnish & Serving

  • Fresh parsley or chives, chopped
  • Side salad for a fresh contrast

Instructions

Step 1: Prepare the Pastry Crust

  1. In a bowl, mix flour and salt.
  2. Add cold butter and rub it into the flour until the mixture resembles breadcrumbs.
  3. Stir in the egg yolk and cold water to form a dough.
  4. Wrap in plastic and chill for 30 minutes.

Step 2: Blind Bake the Crust

  1. Preheat oven to 375°F (190°C).
  2. Roll out the dough and fit it into a greased tart pan.
  3. Line with parchment paper and fill with baking beans.
  4. Bake for 15 minutes, then remove the beans and bake for another 5 minutes.

Step 3: Make the Quiche Filling

  1. In a bowl, whisk eggs, cream, salt, pepper, and nutmeg.
  2. Stir in grated cheese and your chosen add-ins.

Step 4: Assemble and Bake

  1. Pour the filling into the pre-baked crust.
  2. Bake for 30-35 minutes until golden and set.
  3. Let cool for 5-10 minutes before slicing.

Step 5: Serve and Garnish

  1. Garnish with fresh herbs and serve warm or at room temperature.
