Ingredients

For the fruit filling:

  • 1½ lbs (700g) fresh rhubarb, trimmed and cut into 1-inch pieces

  • ½ cup (100g) granulated sugar

  • 1 tablespoon orange zest

  • 1 tablespoon fresh orange juice

  • ½ teaspoon ground cinnamon (optional)

For the crumble topping:

  • 1 cup (125g) all-purpose flour

  • ½ cup (100g) cold unsalted butter, cubed

  • ½ cup (100g) demerara sugar (or light brown sugar)

  • Pinch of salt

  • 2 tablespoons oats or chopped nuts (optional, for added texture)

Instructions

  • Preheat the oven: Set oven to 375°F (190°C). Lightly butter a baking dish (8×8-inch or similar).

  • Prepare the fruit base: In a large bowl, toss the chopped rhubarb with sugar, orange zest, orange juice, and cinnamon if using. Spread the mixture evenly in the prepared baking dish.

  • Make the crumble topping: In another bowl, mix the flour and a pinch of salt. Add the cubed cold butter and rub it into the flour using your fingertips until the mixture resembles coarse breadcrumbs.

  • Add the sugar and extras: Stir in the demerara sugar and oats or chopped nuts if using. Mix until well combined.

  • Top the fruit mixture: Sprinkle the crumble evenly over the rhubarb, covering it fully but not pressing down too hard.

  • Bake the crumble: Place in the preheated oven and bake for 35–40 minutes, or until the topping is golden brown and the rhubarb is bubbling around the edges.

  • Cool and serve: Let it rest for 10 minutes before serving warm with your favorite accompaniment.
