  • 4 cups whole milk
  • ½ cup heavy cream
  • ¼ cup granulated sugar

  • ¼ tsp nutmeg (optional)
  • 1 tbsp butter
  • 1 pinch salt
  • 2 tbsp golden raisins (optional, for sweetness)

For Garnish (Optional):

  • Caramel sauce or honey
  • Toasted almonds or chopped nuts
  • Fresh berries or poached fruit

Instructions

Cook the Rice:

  1. Rinse the rice – Rinse arborio rice under cold water until the water runs clear to remove excess starch.
  2. Simmer with milk and sugar – In a saucepan over medium heat, combine milk, cream, sugar, and a pinch of salt. Stir well.
  3. Add rice and vanilla – Scrape the seeds from the vanilla bean (or use vanilla extract) and add to the pot. Stir and bring to a gentle simmer.

Slow Cook the Pudding:

  1. Reduce heat and cook slowly – Stir occasionally, letting the rice absorb the liquid over 30-35 minutes until thick and creamy.
  2. Add cinnamon and nutmeg – Stir in the spices for extra warmth and depth.
  3. Stir in butter and raisins – For added richness and subtle sweetness.
