Gordon Ramsay’s sausage casserole is a slow-cooked dish featuring pan-seared sausages, a savory tomato sauce, onions, garlic, and beans. This dish is packed with bold flavors and warming spices, making it an excellent comfort meal for colder days.

  • For the sausages:

    • 6 high-quality sausages
    • 1 tbsp olive oil
  • For the casserole base:

    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 red bell pepper, sliced
    • 1 carrot, diced
    • 1 tbsp tomato paste
    • 1 tsp smoked paprika
    • ½ tsp chili flakes (optional)
    • 1 can (14 oz) chopped tomatoes
    • 1 cup chicken broth
    • 1 can (14 oz) cannellini or butter beans, drained
    • 1 tsp Worcestershire sauce
    • 1 tsp fresh thyme (or ½ tsp dried thyme)
    • Salt and black pepper (to taste)

Instructions

  1. Sear the sausages – Heat olive oil in a large pan over medium-high heat. Cook the sausages until browned on all sides, then remove and set aside.
  2. Sauté the aromatics – In the same pan, cook onions, garlic, bell pepper, and carrot until soft.
  3. Add spices and tomato paste – Stir in tomato paste, smoked paprika, and chili flakes, cooking for 1 minute to enhance flavor.
  4. Deglaze with chicken broth – Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
  5. Simmer with tomatoes and beans – Add chopped tomatoes, Worcestershire sauce, thyme, and beans, then return the sausages to the pan.
  6. Slow cook for flavor development – Cover and let the casserole simmer on low heat for 25-30 minutes. Stir occasionally.
  7. Adjust seasoning and serve – Taste and adjust salt and pepper as needed, then serve hot with crusty bread or mashed potatoes.
