  • ¼ cup bell peppers, diced
  • ¼ cup red onion, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • ½ cup shredded cheddar, Gruyère, or Parmesan cheese
  • 1 tablespoon fresh parsley or basil, chopped (for garnish)

Instructions

  1. Preheat the oven – Set your oven to 375°F (190°C).
  2. Cook the sausage – Heat olive oil in an oven-safe skillet over medium heat. Add the sausage and break it into crumbles, cooking until browned.
  3. Sauté the vegetables – Stir in onions, bell peppers, and cherry tomatoes. Cook for 2-3 minutes until slightly softened. Add spinach and cook for another minute.
