For the hotpot:

  • 6 high-quality sausages
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 large potatoes, thinly sliced
  • 1 large carrot, sliced
  • 1 can (14 oz) chopped tomatoes
  • 1 cup (240ml) beef or chicken stock
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 bay leaf

For serving:

  • Fresh parsley, chopped (for garnish)
  • Crusty bread or steamed rice

Instructions

Step 1: Brown the Sausages

  1. Heat oil in a large pot – Place over medium-high heat.
  2. Sear the sausages – Cook for 5 minutes, turning occasionally, until browned. Remove and set aside.

Step 2: Sauté the Aromatics

  1. Cook the onions and garlic – In the same pot, sauté onions and garlic for 5 minutes until soft and caramelized.
  2. Add carrots and potatoes – Stir and cook for another 5 minutes.

Step 3: Build the Sauce

  1. Stir in tomato paste, paprika, and thyme – Cook for 1 minute.
  2. Add chopped tomatoes, Worcestershire sauce, stock, and bay leaf – Bring to a simmer.

Step 4: Simmer the Hotpot

  1. Return sausages to the pot – Submerge them in the sauce.
  2. Cover and cook on low heat – Simmer for 30-40 minutes until the potatoes are tender and the sauce has thickened.

Step 5: Serve and Enjoy

  1. Garnish with parsley – Sprinkle fresh parsley on top.
