Gordon Ramsay’s Sautéed Potatoes are parboiled baby or new potatoes, sliced and pan-fried in olive oil and butter until crispy. Infused with garlic, thyme, and rosemary, these potatoes are a flavorful upgrade from traditional fried potatoes.

For the Sautéed Potatoes

  • 1 lb (450g) baby potatoes or new potatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, smashed
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper

For Garnish & Serving

  • Fresh parsley, chopped
  • Lemon zest (optional, for extra freshness)

Instructions

Step 1: Parboil the Potatoes

  1. Bring a pot of salted water to a boil.
  2. Add the halved potatoes and cook for 5-7 minutes until just fork-tender.
  3. Drain and let them cool slightly before frying.

Step 2: Sauté the Potatoes

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add the potatoes cut side down and cook for 5-7 minutes without moving them.
  3. Once golden brown, flip and add butter, garlic, rosemary, and thyme.
  4. Season with salt and black pepper, then cook for another 5 minutes, tossing occasionally.

Step 3: Serve and Garnish

  1. Remove from heat and discard the garlic cloves.
  2. Garnish with fresh parsley and lemon zest (if using).
  3. Serve hot and enjoy!
