Gordon Ramsay’s scone is a classic British-style baked good made with self-raising flour, butter, milk, and sugar. The dough is handled minimally to keep it soft and light. Once baked, the scones puff up into golden, fluffy rounds that are best served fresh and warm. They’re perfect for breakfast, brunch, or afternoon tea.

Ingredients

  • 2 cups (250g) self-raising flour

  • ¼ cup (50g) granulated sugar

  • ½ teaspoon salt

  • ½ cup (115g) cold unsalted butter, cubed

  • ½ cup (120ml) whole milk, plus extra for brushing

  • 1 teaspoon vanilla extract (optional)

  • Optional add-ins: ½ cup raisins, dried cranberries, or grated cheese

Instructions

  • Preheat the oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Mix dry ingredients: In a large bowl, whisk together self-raising flour, sugar, and salt.

  • Rub in the butter: Add cold, cubed butter and use your fingertips to rub it into the flour until the mixture resembles coarse crumbs.

  • Add milk and mix: Pour in the milk and vanilla (if using). Stir gently with a fork until a soft dough forms. Do not overmix.

  • Knead lightly and shape: Turn the dough onto a floured surface and gently knead just until it comes together. Pat or roll out to 1-inch thickness.

  • Cut into rounds: Use a round cutter to cut out scones. Press straight down—don’t twist—to help them rise evenly.

  • Arrange and brush: Place scones on the prepared baking sheet. Brush the tops with a little milk for a golden finish.

  • Bake the scones: Bake for 12–15 minutes, or until puffed and golden on top.

  • Cool and serve: Let scones cool for 5 minutes before serving warm with your favorite toppings.
