  • 1 tablespoon Worcestershire sauce

  • 1 cup beef or chicken stock
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas

For the Mashed Potato Topping

  • 2 lbs potatoes, peeled and cubed
  • ¼ cup butter
  • ½ cup heavy cream or whole milk
  • ½ cup grated Parmesan cheese (optional, for extra flavor)
  • Salt and pepper, to taste
  • 1 egg yolk (for a golden topping)

Instructions

  1. Preheat the oven: Set to 400°F (200°C).
  2. Cook the meat mixture: Heat olive oil in a pan over medium heat. Sauté onions, garlic, carrots, and celery until softened. Add ground lamb and cook until browned.
  3. Add flavors and liquids: Stir in tomato paste, Worcestershire sauce, and red wine. Let the wine reduce for a minute, then add the stock, thyme, rosemary, salt, and pepper. Simmer for 15 minutes until thickened. Stir in the peas and remove from heat.
  4. Prepare the mashed potatoes: Boil the potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, cream, Parmesan, salt, and pepper. Stir in the egg yolk for a richer texture.
  5. Assemble the pie: Spread the meat mixture evenly in a baking dish. Top with mashed potatoes, smoothing with a spatula or fork to create a textured surface.
  6. Bake until golden: Place in the oven and bake for 20-25 minutes until the top is golden brown. Broil for an extra 2 minutes if needed for extra crispiness.
  7. Serve hot: Let it rest for 5 minutes before serving.
